My Taste Buds Say Yes But My Hips Say No
I’m not sure how blogging made it on the list of priorities today, but sometimes you just gotta do what you gotta do. My kids may be getting their Easter goodies in Target bags tomorrow, but at least my many, many, many (ha!) readers will have something entertaining this evening. That’s right, kids, the Easter Bunny shops at Target, just like us! Maybe we’ll see him (her?) in the diaper aisle the next time we’re there. One can only hope.

We had a family get-together last Saturday, before The Week of Ill began thankfully, and I made a carrot cake for my contribution. I used Pioneer Woman’s recipe found here and it is so yummy. Probably not all that good for you, but tasty nonetheless. Do the organic carrots cancel out the vegetable oil? I’m choosing to believe they do.

I like my cake cold, as in refrigerated and this one is perfect for that. It’s dense, plus with the cream cheese icing I just feel like it needs to go in the fridge anyway. We finished off the last of it recently and seeing these pictures is making me want more! More cake!
